The Cordon Negro Brut Cava has as dualistic a history as its flavor. Born on the grounds of La Freixeneda in the 1100s on the Sant Quintí de Mediona estate, rich farmland that is now a township just west of modern day Barcelona. The sparkling wines made in this tradition were originally called Champaña, but now the name Cava proudly denotes the timeless stone cellars they are matured in. In the 1800s, the white grape varieties that were developed grew out of the need circumvent a disease that destroyed red variety grapes, and led to the complex, deeper flavor that you can still taste in the region’s Cavas. This transition from red to white also occurred at the union of two winemaking families, the Ferrers, the original owners of the estate, and the Salas, wine exporter to Latin America. These two producing families became a force in exporting exceptional Cavas that have stood the test of time, have been developed by the traditional method, and like it’s history, has become one of the most versatile sparkling wines across all celebratory occasions.
